Our pop-up Location

On 18 March 1891, the first civil hospital of Amsterdam opened her doors in this building. At the time, it was the most modern hospital in Amsterdam.

A world changing event happened in this building on April 25 1947: Johan Cruijff was born!

So it's safe to say this building was meant for greatness. On April 2024, 77 years later, it's time for another world-changing moment.

The Chef

At just 34 years old, Bryce Steba has already amassed a more decorated resume than many seasoned chefs.

He has worked with chefs of multi-Michelin-starred restaurants Cristoph*, Juliana**, and Restaurant Librije***. Apart from that Bryce has already founded three concept-heavy restaurants. But it is more the 'why' than the 'what' of Bryce's work that reveals his signature personality.

Story behind the R

The R finds its origination in the R-model of circularity. This models shows and valuates different techniques of circularity.

Techniques like; re-use, refurbish and repurpose.

The concept of our restaurant is based on this model. This means that with every meal we make we think about food waste and how to minimize it.

This means that more thought goes into the creation of any dish and less CO2 is emitted. Which means that you as a guest are able to enjoy our meals worry free.
